I have sent an item and the buyer has received it but is still shows in pre transit. Also the tracking info was correct. Will this hurt my star seller score? If so this is no right at all.
@SignatureEngraved: What happens if you click on the tracking number link on the actual order? If it opens the courier's tracking page and shows the scan history then you have proof that the tracking information was entered correctly. In that case you should pursue it - while Etsy will not manually adjust Star Seller stats they can, in some cases, fix the underlying data and then the Star Seller stats will auto update (but not retroactively).
No, this will not affect your Star Seller score. Etsy only looks to see whether a package was shipped on time. If the package never received an acceptance scan, or was scanned later, then it would affect your Star Seller. But in transit is not an issue for Star Seller.

I ship at least half my orders as flats, which USPS doesn't scan even though Etsy likes to tell sellers and buyers that it includes a tracking number.
Sometimes flats get scanned along the way but for the most part tracking is hit or miss. I have old orders that still say pre-transit or in transit but delivery was confirmed when the buyer left a review. I've had star seller status every month except once since Etsy rolled it out so the pre-transit thing hasn't affected my shop.
Maybe the buyer confused your item with something they purchased from another shop.
I have certainly dealt with those scenarios.
ps, you have an incomplete shop. You have no EU / UK compliant shop policies including a gdpr. You will want to get that taken care of asap.
