Didn't realize in my listings that I could not have on the same item a physical and "digital proof" item. I noticed my star seller stats are off as two orders for a .jpg proof was requested before two buyers wanted to place a physicals order. When they ordered the digital proof I create their image and send the .jpg through messaging; hense, no tracking when I completed the order.
How can I get this corrected for my star status?

You can't get this corrected, because the listing was set up as a physical item and all orders of physical items require tracking. You need to set it up as a made-to-order digital listing. So basically one physical listing and one made-to-order digital listing for the "digital proof" item.

I’m a US seller, but offering tracking is not always possible on my orders. If I’m unable to add tracking to an order or indicate an exception, will it count against my Star Seller eligibility?
Adding tracking to all physical orders is one of the criteria for Star Seller if you’re in the US. If you mark an order as complete without adding tracking, it does not meet the requirement for Star Seller.
Digital items require a file available for immediate download, which presents a problem for custom digital items. I’ve listed these as physical, but now these orders are counting against my shipping score. What should I do?
We’ve made an update to fix this. Now you can specify if your listing is a made-to-order digital item, so shipping and tracking won’t be included in your Star Seller evaluation. To make this change, you should first specify the listing is “made-to-order” in the “About this listing” section. Next, specify that the listing is “Digital” in the “Type” section, and you’re all set—the item will be referred to as a "made-to-order download.” Note, if you’re updating existing listings that fall under these parameters and would like them to be recognized as made-to-order, you’ll need to delete the file(s) associated with the listing. Right now, this functionality is only available on the web version of the Etsy platform. For more information on this process, check out this Help Center Article.

Re: Need help with removing two orders that didn't have tracking as nothing was shipped.
Simple answer is you can't.
Digital has to be on one form of listing. Physical on another.
You will simply need to wait until the time passes for this to fall off.
