I'm unable to list a new item, save it as a draft, or preview it. Everything is fully filled out, and this was a listing that had already been saved in draft form.

I just had this same problem. You've probably moved on but I'll leave my reply in case someone else has the same problem.
I was unable to Publish, Preview or Save as a draft. I checked all text boxes to make sure they didn't start with a space. That wasn't the problem. So I recreated my listing again by copying another listing. I still had the same problem. So I started a third time, saving as draft after each change. I didn't have a problem until I edited variations. I figured out that my variations had lost it's name (the title), for some reason it wasn't showing up. I created a new variation below it and deleted the first one, and that fixed it. This seems like a website error rather than user error. Hope this helps someone.

Thanks! That worked for me! I think it was a glitch too, but glad there was a work around.
Is it a FLW item? I believe Frank Lloyd Wright is trademarked. You'll probably get those items deactivated by etsy if it is.

I have experienced same problem and later I realize that I did not enter variation title name because when I was entering it was not changing so I understand that you should click on update after your modification.
