I got dinged for shipping two orders last month - one on time and one without tracking and lost my Star Seller ranking. But one order asked to pick up in person (no tracking) and the other asked to wait for after the new year so it was a few days later than normal. Is there a way to argue or get the Star Seller changed - feel like it is always these random orders and then I'm not able to talk to anyone to get it changed. It is frustrating.

They will not argue with you or manually adjust your Star metrics. It is very binary and run by bots.

No Etsy won't change your rating. If you have someone who wants you to delay shipping, you can push out your shipping time once.
Next time you could fixe those issues by extending shipping on the one and sending a confirmation receipt via the mail with tracking on the other. No they won't change it I'm sure.
Orders that are delivered in person do not count towards Star Seller Period.
Etsy states right in the rules that they will not change anything and in your case, it was two decisions that go against the rules that You decided to make.
They won't even correct anything that seems to be accidental - my guess is that you don't have a chance since you made the decisions to go against the rules.
Sorry, you didn't follow the rules so you are out of luck for this month. Going forward, here is how you can prevent this recurring.
First of all, for the local pick up/hand delivery option, this is not supported by Etsy, HOWEVER, as you are in the US, you have the option of purchasing an Etsy label for a letter size item (around 60c) and you can then send a receipt to the buyer after the pick up/drop off. This will satisfy Etsy's SS requirements, and if you are concerned about buyers claiming non receipt, you can print 2 copies of a receipt for the pickup, have the buyer sign both to confirm she has her item, then POST one of the copies back to the buyer using the abovementioned stamp label.
Unfortunately this only works for US sellers. Postal Services in other countries (my own, AU, included) may not have any way to prove receipt on a standard stamped letter.
Secondly, when a buyer asks to defer a shipment, you should push out the delivery time so that you are not dinged for late delivery.
Honestly this star seller thing is ridiculous! I was a star seller before prices on necessities sky-rocketed, but I lost it due to my sales dropping off. Hey, it was no big deal, I don't expect people to buy my art when their necessities are far more important. Stop worrying about a star seller badge, people, if you have a good relationship with your buyers, you don't need silly badges, they'll return when they can afford to.
And remember what you create isn't everybody's cup of tea. Some will absolutely love what you do, others won't be interested at all. So trying to be a star seller 100% of the time isn't practical for everyone. It doesn't take away from who you are & what you create.
