Yes, we can, but it's a bit more convoluted. This is the 'cheat sheet' I use, I wish I had saved it with the poster info, but there are a couple of very helpful threads about the new form. Maybe do a search and they will come up?

"Linking photos/variations
Click the variations tab up top.
Click 'Manage variations' button on the right.
You should see your variations on the page that pops up/opens.
Find the variation you want to link photos too and click the little pencil icon next to it. A page will open showing each option with a Select photo button to the right: When the next pop up page opens you should see 'Link photos to this variation' option at the top. You need to click that to turn the option on if it isn't already on.
Then when you scroll down to look at each variation option you should see a button to 'select a photo' for each one.
Click that button and select the photos for each variation option."
