Today I sold an antique rhyton, which is normally $250, but the seller used a promo code that started today that I did not create, “JEWELRYSALE30” or something and I don’t even sell jewelry, nor do I offer 30% off to someone I’ve never sold to. This offer was good for about 50 of my listings or maybe more. I canceled the promo code (obviously) but I don’t know if I want to honor this, considering this person in California purchased this thing using a code I didn’t make. How would she have known to use that code, especially considering I do not sell jewelry?
My promo codes are all weird and could not be guessed. I offer them to all my customers after their order and it’s good for 20% off.

Codes are available through many resources including even the browser Edge. The buyer may have asked for codes to be applied and it worked.
That is the danger with coupons no matter how unique you may think they are.
If you want to cancel go ahead but why punish the buyer who simply found a code that worked. You have jewelry and you are already sporting a 25% off. Is 5% too much more? The buyer does not get both.

It would only work if the seller had enabled that specific code for their shop, though.
Someone used a code in your shop that you had not enabled? Is is possible that you signed up to participate in the jewelry sale without noticing/remembering? If you haven't created that code or opted in to the sale, and you have made sure that Etsy didn't cover the cost of the coupon, I would be contacting Etsy for reimbursement. That way, you don't have to cancel the sale and disappoint the buyer.
This is Etsy's official Valentine's Day jewelry sale which is automatically named "JEWELRYSALE25", "JEWELRYSALE30", etc. It seems you might have accidentally clicked on the link to sign up for the sale when it popped up on your dashboard, or Etsy glitched and signed you up for it. You should be good now that you've turned the sale off.
Sellers have to opt in to these site wide sales - those codes shouldn't randomly work for anyone.
@NoahsRose you must have opted in without realizing it. I recall seeing the banner at the top of the seller dashboard asking if I wanted to (I did not).
You don't have to honour the sale, you can choose to cancel and refund.
