my digital made to order listing keeps showing up as completed when customer orders.
How do I fix it

Giving you a Bump, Suzana. I have no idea how Digital Made to Order listings work, sorry. Because they are Digital, I thought it was automatically Marked as Complete. But I don't know for certain, or if you the Seller has to Mark it as Complete.
From the help center: Unlike instant downloads, you don’t upload a file when creating a made-to-order digital listing
Its a glitch.
Edit the listing, try using the old listing format if possible. change the date or the type, save, reedit to change it back.
it will fix it for now.

I am not sure if you are saying the customer receives a receipt that says complete when they purchase or if you are saying it no longer appears in your open orders but rather in your completed orders. But read the above article and make sure you are setting the listing up the way it describes.
