I sold a plant in earlier December but due to upcoming weather, the customer asked me to hold the plant until today. Due to my shipping profile, I am supposed to get all orders out in 2-3 days. I put a pseudo tracking number in, just to show it as a completed, on-time shipping. My plan was to go in and update the tracking once it actually went out. Since I'm past the 3 day window, the shop manager wont let me edit the tracking number. Now my Star Seller shipping rating is trashed and I'm not sure how to fix it. Am I stuck losing my star seller rating or what can I do?

There is nothing you can do.
You could have changed the ship by date when the buyer asked to hold off on shipping. That wouldn't have affected your SS rating.

You can understand why that shouldn't work. If we all were allowed to put pseudo tracking numbers in, then no one would have to ship on time.
For the future, just update your ship-by date when asked to delay shipments. And this will fall off your star seller calculations in three months.
You ought to have updated the shipping date which you can do.
Putting in a fake tracking number can have consequences. Etsy asks that we do not add fake tracking numbers.
You won't be able to fix star seller. You will need to wait until this sale passes into history or you get enough sales to overcome this one.
