A customer gave me a 1 star review, but we later resolved the issue and he edited his review to a 4 star review. The star seller stats still says that the 1 star review counts and I'm not above 4,8. This is clearly wrong, but the stats are not properly updated. Is there some kind of a delay in calculating the reviews or is this a bug that an edited review doesn't get updated in the stats?
Stats can take 1-2 days to update with changes, but changes in the last couple of days in the month may not set in in time for the badge awards on the 1st. Etsy will not retroactively change the badge award, it is based on the stats when they do the calculation.

I'm having the same issue with message response times. I've had my star seller status since the program started, and I think @BootifulLabels is correct. That's such a bummer.
In my case I replied within minutes to a help request, but I replied in the convo thread attached to the order, not the new message thread that the help request initiated. I had read that the messages and order convos were being merged, but it turns out, not for help requests. They open a new thread.
Lesson learned the hard way. Now, I have enough message responses to qualify, but they aren't showing up in the spreadsheet Etsy is reporting so I guess I will lose the star seller status.
