Needing help with shipping price adjustments.

I had an international purchaser who needed a change in their shipping (they requested delivery confirmation & insurance) after the transaction was already completed. I don't know how to adjust the shipping charges once the item has been purchased, so I created a custom listing just for the shipping price.
I'm sure there's a better way to do this, but I don't know it yet. What is the best way to do this for future reference?

I don't think there's any way to invoice them after-the-fact for this with DC. If only Etsy let you create a separate listing for adding shipping features...
