I’ve heard of zoodles (zucchini noodles), & squash noodles, beet noodles, carrot noodles & butternut noodles. 

Zoodles & squash noodles are a good sub for pasta. Drop in a frying pan for just a minute to warm up then put your heated sauce over top. Some ppl who like them w/more bite just put them on a plate/bowl & then put heated sauce over them.

I love rutabaga! I've never tried the noodle version of any vegetable though. For rutabaga, I just peel, cube and cook in salted water. Rutabagas are a root vegtable and can become somewhat hot or bitter with age.  I cannot imagine using them as a noodle . I think they would be good served with crumbled bacon on top of them though.

Alot of peopel are trying to avoid gluten and/or carbs, so rutabaga sounds good to me.  I've always found rutabaga to have slightly sweet taste.

I had no idea this was happening when I ordered ruabaga seed for my garden.  Now I can't wait to try it making them into noodles!

Nowadays you can get :

zucchini noodles 

carrot noidles

beet noodles

yellow squash noodles

rutabaga noodles

and more

zucchini & squash noodles should be lightly salted & allowed to sit for abt 1/2 hr then squeezed dry. Don’t boil them, they turn to mush. You can lightly sauté in a frying pan for abt a minute then put whatever sauce and/or meat. 

All of them are good in a salad too, instead of or in addition to lettuce.
