I've had the same problem. I have 1-3 days processing time on most of my items also, and my listings keep defaulting to a January delivery date. It's a comouter glitch. Etsy is aware of the problem and theyre supposedlyworking on it. However, as a fix in the meantime, I've been changing my shipping profile every day. I have 2 different profiles that both have 1-3 day processing time. I just do a bulk change from one profile to the other, and the system updates properly to a delivery date next week. Yiu can change the processing time manually. It's just more time consuming. Unfortunately, it switches back to the wrong dates every night, and all my listings have a January date in the morning, so I have to switch the listings again, which is rather tedious! Considering this is the peak shopping season, you'd think their IT people would have fixed this issue already because it's been going on almost a month now but anyway.
