Why did Etsy uncorectly messed my processing times?! I can't reverse it?

Hi,

 so I very deliberately have set the processing times of my items depending on where I'm at - I have two houses lol. So today Etsy introduced this "great new" system where they just mixed it all up and I can't reverse it? WTF? Is there any rhyme or reason to it? Some of my things that took 1-3 days to process stayed in this category, other are in the 3-5 days category and vice versa. Can I opt out of it? I would gladly manually undo all of my 440 listings but I can't?!

We all woke up to Etsy's new processing time profiles.

Sorry but you'll have to look at the processing time profiles Etsy created for you ... and you can add more if you like and delete those that you don't apply. Then you can apply the processing time profiles to your listings. It's similar to shipping profiles but now we need to use the shipping time and processing time profiles together.

I didn't welcome the change, but it is possible to figure out how to make these work.
