Hi there my star seller badge was tennis in August rather unfairly as I had updated my listing with revised dispatch times etsy failed to recognise and 5 items marked as late. 

Roll on 3months I'm back to 100% and it's not been awarded please can you advise why I've met all the criteria shop PencilsByCARLA

The badges are calculated across a 3 month period.  The badges just awarded were for Aug/Sep/Oct, you didn't make 100% until your August mistakes dropped out of the calculation ready for the next badge period Sep/Oct/Nov to start.  You are currently viewing the stats for this period which is not over until the end of this month.  Click the Last month's Badge tab to see how you finished the period just ended.

if you tried to change the dispatch date, after the dispatch date, etsy won't save the new dates

You can edit the “dispatch by" date once, as long as the original "dispatch by" date hasn't passed, and the buyer has agreed to the new date.

and you have to also update and notify buyer after they gave come back and agreed they were happy with the new date.
