My star seller stats are saying I've only added tracking to the 60% of my orders but I've gone through for the time period it says it's calculating on and every single one has and shows the tracking info. Anyone else have this issue? Is there anything that can be done to resolve it?
Have you tried downloading the order history spreadsheet to check which ones exactly they are missing tracking on?

If it opens the courier's tracking page and shows the scan history then you have proof that the tracking information was entered correctly. In that case (and if it was shipped on time) you should pursue it - while Etsy will not manually adjust Star Seller stats they can, in some cases, fix the underlying data and then the Star Seller stats will auto update (but not retroactively).
If that does not work, have you checked the applicable CSV file on your Star Seller page to confirm which order(s) Etsy thinks was shipped late and / or without verifiable tracking? If the shipping company is supported by Etsy make sure that the shipped date, tracking number and shipping company show correctly on the actual order. Etsy relies on a third party vendor for tracking (and tracking number validation) and uses the data on the order.
Keep on mind that the metric is shipping with VERIFIABLE tracking, so a typo or something like a leading or trailing space will be seen as as an invalid tracking number. An unsupported shipping company or invalid / unverified tracking number equals shipped without tracking.
