I’ve been a star seller for quite some time and on April 29 I received a one star review from a customer that apparently thought I had some amount of control over the US Postal Service. Long story short, I was able to resolve the issue with the customer and he edited his review to five stars before the end of the day. By the time the review period Closed I met all of the criteria to be a star seller for the month of May. However, it was not calculated in the star seller criteria and I lost my badge. Hopefully there’s a way for Etsy to fix this on the back end because there is a noticeable decline in sales without that badge and ultimately I didn’t do anything to lose my status.

I'm sorry that happened to you, but Etsy has made it clear that they will not manually adjust Star Seller data. The other bad news about yours is that it happened so close to the end of the month and sometimes a couple of days at that time don't get counted. I would wait a few days and see if your 5 star review catches up with your Star Seller status.
The last day to account for SS would have been April 26th ... the last full week of the month.
if the review was changed after the calculation by etsy, it won't be re-calculated until 1st June

This is just not correct.
The final day for SSP is the last day of the month with a few "qualifications" / "exceptions".
1) Midnight UTC (which Etsy uses for all SSP metrics) may mean Etsy "cut-off" for the Month may be some hours before or after a Shop's Local Time
2) Messages are attributed to the day and time they were due the 24 hour reply. If the final time for response is the first day of the next Month, then that Message will count in the next Month's stats.
3) On Time Shipping. This metric uses the latest Processing time / date. If an Order has a Processing timeframe which puts the final day of Processing in the next Month, then that Order will be attributed to the next Month's statistics, even if it is processed and shipped in the current Month
4) The minimum Value and Sales benchmarks, which must be met to be eligible for SSP, may be affected by point 3) above
