We set the processing time to 1 working day but the processing time doesn't take into account the holidays. This week-end we received some orders which were planned for Monday 1st may (yesterday) which is holiday so how can we sent them with a tracking when all the carriers didn't work??
Now our rating for the Star seller badge decrease, but how to solve that, if the system doesn't take into account the holidays on the estimated date to ship the orders?

Etsy has never accounted for holidays, you have always had to change the processing times to account for the holidays in your country.
so I suppose you didn't care about customer service before, and shipping on time
and you only care now, not because you shipped them late, but because you lost the badge
however, with the number of sales you have, you will probably get it back by the end of the month
