One customer bought something from me and ask me to help him, I have answer to him after few min but in a different message where I said thank you to him, so now looks like on the Etsy Seller app I have 2 messages, one that looks like I have answer after few days, and one that I have answer after few min and few hours. The problem is that has been calculated based on the first message probably as my Message Response Rate went down and affected my Star Seller eligibility. What can I do in this case, I would like the Etsy Support to review it again and fix it if it's possible, I can prove that, I have screenshots with date and time.

If I'm understanding correctly, you responded to your Buyer in a separate Message from the one which they Initiated. You said Thank You and responded in this separate Message. *(Please correct me if wrong).
If that is indeed what happened yes, you do need to respond to every Message that you did not Initiate.
