I have already contacted Etsy and they are aware of it.
My processing times are set for 3 weeks and an order came in for 2 weeks processing.
One is fine but if I get more then that will be a problem.

Just making sure you are aware that you can extend the ship-by date if it happens again and becomes a problem to fulfill. Just make sure you are in contact with the buyer first so they understand and agree to it, and since you can only do it once (for a maximum of 3 weeks) you need to extend it out accordingly, as you won't be able to change it again. Obviously not a solution, but as you say you have already informed Etsy, and this is just to make sure you are covered and don't run into an ordering being late issue.
