As I have read, so very many of us are frustrated by the endless circles we are sent on. If there were a human we could ask, It would take so very much less time. Our time is valuable as shop owners and it is very frustrating to go on these endless goose chases. All I want to do is correct my sold page. I didn't need to purchase postage because my friend bought it and lives locally so I hand delivered it. I can not seem to get help on how to correct this on my page so it continues to look like I am sending it late. HELP!
If by "correct" you're talking about getting credit for star seller, you can't.
If by "correct" you're talking about completing the order and moving it to the Completed tab, you can:
Update Progress > Complete Order > This Order Doesn't Have Tracking
This is going to sound like a dumb suggestion, but to satisfy the SS Metric (which requires Tracking), you could mail an Invoice to your friend. And put that Tracking No. in. I've not done this, but it's what others have suggested, due to the fact there is no way to put Tracking on a local hand delivered order.

If it is already showing as late, this will still make it late. You need to do that within the shipping/processing window. Ex. if you said it ships in 2 days you can't generate a label for a FC letter rate and attach that on day 3+ as it would still show as late.
You simply mark the order as complete.
@BeadedMemoriesByPam: As others have suggested, you need to mark the order as complete if you did not do that yet.
