It appears that the paradigm in Shipping Settings has changed. Before today, a Shipping Profile assigned countries, processing times, and services, but, from what I have gathered, that seems to have been split into two, Shipping Profiles and Processing Profiles, in which:
The bulk editor in Listings only filters by Shipping Profiles, not Processing Profiles. The bulk editor does allow Processing Profile reassignment, but it's only letting me alter forty listings at a time. It should allow me to change all selected listings instead. Most importantly, it should also allow filtering by Processin Profile.
I don't know what is going on with it. I went in to update a quantity for a listing. I got a pop-up about processing times for variations. I was unable to save the updated quantity, unable to save the listing at all.....received an error to fix the processing time. I closed the browser and used the app to update the quantity. I have a bad feeling this may create one heck of a mess.
I'm frantically assigning processing profiles across all my listings as we speak. This is deeply unproductive.
I just discovered this chaos a few minutes ago. I had no idea this change was coming until I got the little pop-up telling me there's something new. I have a week to make sure everything is right. Yay!
The new processing profiles are not scheduling orders for my shop correctly. The first day I assigned my own processing profile, orders in my shop ended up being scheduled to ship two business days later than what I programmed. The second day I adjusted profile assignments, and orders are being scheduled to ship five business days later than what I programmed.

Wow I had three profiles, two I don't use. The two timeframes I don't use or never have used, contained all sold items. I sell vintage, never to be used anyway. Hope this gets processed ok, I agree I could see this turning into a problem...
This looks like it could be a maintenance nightmare. I sometimes change processing time on my shipping profiles, which easily updates hundreds of listings at once. By separating out the processing to a separate profile, it feels like I'll have to update each listing one-by-one to change the processing time. Does anyone else see it this way? Have you found a way to update them in bulk?
You can bulk edit processing profiles same way as you bulk edit other things. The only difference right now is that it will only let you select 1 page at a time to bulk edit vs letting you bulk edit all on all pages. Not sure if that is a bug in the new processing profiles system or intentional.
Go to Shop Manager > Listings.
Select the listings you want to change Processing Profiles for and click Editing Options up top. Change Processing profile is one of the options. Note as mentioned above, that option will be greyed out and not clickable if you select more than 1 page of listings to edit so you have to do one page at a time.
Thanks for the tip @WitticismsRus - that makes it easier. However, still not as simple as updating one shipping profile, as I've always done in the past.
I totally agree. What used to be just a couple of clicks now takes much longer and many more clicks. Etsy loves adding more mouse clicks to everything it seems.
This change is a huge problem. I've made the changes to the processing times and can see on the listings it APPEARS to have updated. However, the processing times given to customer and orders is not what I've set up. The new system has a problem is not linking to the listings and I can't change the ACTUAL processing times customers are seeing before they order. Nightmare.
Wonder if there's any place to give Etsy feedback on this one?
As @WitticismsRus said you can go page by page. Etsy changed all listings to reflect how soon you usually mail things, rather than the processing time you want to have. All of mine were 1 - 4 days. They were all changed to 1-2 days. I bulk edited page by page and changed them all back.
What on earth! Just spent over an hour on this mess! What is the point to this? What was a quick click to change adjust processing times against profiles now has me checking bulk listings in order to change. Unable to make a quick adjustment in profiles! Had to reassign listings with processing profiles within bulk editor.
Hi. I am very new to Etsy. I am a having an issue with delivery times. On my listings it says "delivery times vary, please contact seller". This is because when I'm setting up my delivery profiles it is not allowing me to enter a time frame for the delivery, the box is completely missing!
I've tried on the app and on my laptop, I've been trying to figure this out for 3 days with no help from Etsy support. anyone else have his issue?
The Processing times have recently been stripped from the Delivery profiles. They are now in separate "Processing profiles". Look for them in Shop Manager > Settings > Shipping settings.
As you are in the UK, you are probably seeing the wrong information from the Help centre article, as they have not updated the English (UK) version yet.

My usually processing times I have set are 1-2 days. I changed my shipping processing times to 2 weeks a little while back as I was going to be traveling. My plans changed and I no longer am traveling. There is no option for me to change my shipping profiles back to 1-2 days. I have the ready to ship option set to 1-2 days for all my listings now, but any orders I’ve been getting are still telling me to dispatch within 2 weeks and not my usual 1-2 days. Not sure what’s going on, is this issue being addressed?
They have told sellers that it is being worked on, but then again, they previously told sellers it would be fixed today. I'm not sure why they released something that doesn't work and is hurting shops that need to change their processing times?
Yesterday evening briefly the processing time did change to the correct settings but I see this morning it's back to the incorrect ones I set whilst I was away so still not fixed. No wonder my orders have dried up ! Fingers crossed it happens today, this must be impacting on Etsy revenue, you would think that alone would spur them on to action.

I changed my processing time to match my shipping time - custom 1-4 days (though my items are ready to ship, I’m trying to build in a cushion just in case). Yet my listings say it will arrive May 30 - June 5. And I have it set to no weekends. So now they’re using shipping and processing times as expected delivery dates? God, I’m so confused…I don’t understand why this is necessary. Shouldn’t shipping times already include processing? Why the need to break it out from shipping estimates? What am I missing?
You’re not missing anything, it’s Etsy that’s missing the mark, every single time. I swear some of these people need to actually run a shop for a while before they mess with something.
It's a complete mess. My shipping profiles and delivery profiles don't tally with what is being suggested to buyer on listings; they're always out by a few days. My international (I'm UK based) delivery estimates are suggesting items that take 1-4 days for me to process will arrive with customers in the USA within a week, including the processing time!! I go and change this in the shipping profiles and the next day it changes back to Etsy's made up delivery estimates which will just leave customers annoyed and disappointed. This is not to mention hundreds of sold out listing making everything look a mess.
This whole thing is driving me crazy and I am so annoyed - yes another unnecessary "tweak" to something that didn't need tweaking! Not sure how many more of these kinds of mess ups I am going to be able to take before I decide Etsy is more of a headache than it's worth! My suggestion to Etsy would be to fix it quick or just roll back the whole thing.
I set the processing profiles to 5 / 6 days and the transit times, in the shipping profiles are 6 days .
Supposedly if um customer bought today they would receive their package within 12 / 13 days but in the listings it shows "order today to receive by 9 Jun - 12 Jul" !!!
