We have many listings that take personalization, but for one listing in particular, sometimes only the first word saves of whatever the customer enters. This happens maybe 1 out of 50 orders for this specific item. I have to reach back out to the customer and ask them to repeat what they already entered. Again it's only for this one listing. It's been happening for a couple months now and was hoping it would eventually fix itself but hasn't happened yet. Please reach out to us privately if you need more info.

Do you have personalization set to the max number of characters (1024) on those listings?
I had a custom order come in last night and received a full paragraph in the customization box.
This might be related to the way specific listings are set up, a glitch with the app, or specific devices used to purchase the item.
Bumping this up as this bug is still occurring. I reached out to Etsy seller support chat but they weren't able to help.
