There are odd characters coming up in alt text when I enter an apostrophe.
I enter my text. When I save the text and go back, the apostrophe is gone and it is replaced by #39;
We want to make sure that in the shop that people are seeing the apostrophe and not the #39;
Do we have a way of viewing the alt text ourselves once enter and save it?

The apostrophe is a special character, so it is encoded as #39, and may or may not display correctly to the end user. You often see this in the titles of forum posts here when people use quotes in the title.
I would stay away from special characters in alt text. Here is more info:
The alt attribute will accept any text string, but there are certain best practices that will help.
- No special characters. This includes UTF-8 characters such as unencoded curly quotes, as well as HTML Character Entities.
- No HTML.
- No more than 125 characters.
- Just identify the picture. No need to refer to it (“This is a picture of…”).

@CrimsonLettersStudio Only letters are allowed in certain fields. Try no apostrophe.

Keep in mind that alt text is also used by blind people who use screen readers, so they should be easy to understand when read outloud.
