You need to list the item as a made to order digital file. Then, when it's completed you upload via etsy and it completes the order itself.
In the meantime, are you accessing your dashboard via desktop or the app?
Via desktop, you simply hit complete order--I believe the issue you're having may be app related.
(On a side note, several of your items are not allowed to be sold on etsy--etsy does not allow sellers to offer spells offering magical outcomes--even if you are sending proof of casting. Having those items in your store means at some point, etsy will start deactivating them, then you run the risk of being shut down and never being allowed to sell on etsy again)
From etsy's house rules:
Metaphysical services, such as reiki and spell casting, are prohibited on Etsy. With this in mind, tarot or psychic readings that include a physical or digital copy of said readings (e.g., a recording, email, or tarot spread photo) may be sold on Etsy.
Supplies related to spell work, such as herbs, crystals, candles, and tinctures, may be sold on Etsy as long as they are not listed with metaphysical claims.
