I cancelled the same order twice- once on the app and once online, due to it appearing it hadn't been cancelled properly the first time. It removed 2 sales from my total sales number.
I'm not surprised. The app is notorious for malfunctioning. Unlikely any Etsy employee will know how to restore the errant sale, but you can always try contacting them through their support maze.
Just don't use the app for anything really important.

You can't cancel on the app. That's probably why.
You can only fully refund on the app.
The sales number does not indicate the number of orders, but the number of items sold. Did the order contain 2 different items?
It's unlikely that you cancelled twice, because you can't cancel orders on the Etsy Seller App*. You can issue a full refund only. If you want to cancel an order, you need to access the Etsy website through an internet browser. So in your case, you issued a full refund via app and finally cancelled the order via website.

Ok thanks, that sounds right! It took 2 sales from me when I cancelled on the website then- the order only had one item in it.
