Melanie shared some fantastic ideas! Watching my table/space evolve has been rewarding. I highly recommend always photographing your display so you can watch the progression. I don't sell jewelry, but some of the same principles apply regardless it seems.
I like to have varied heights, and depending on how much space I have, and where I will be standing (behind my tables or to the side) going vertical seems to work well. I painted a whole bunch of different little wooden boxes/bins/crates and use various things to create height I need. I mix in some lace doilies so my display feels softer (my items have lots of hard surfaces with hard angles - and I wanted to soften it up).

I love chatting with people when they approach my table, so it helps me a bit to not have everything labeled (every item is clearly priced) but I took away the sign that said 'magnets' for example, because it give me something to say when they approach - 'so all these are magnets, and then these little ones are commonly used for gift wrapping..."
One other little observation- I now build in some 'hidden' areas to my display facing the back of the table where I can set my phone and my bottle of water and a couple mints...things that are mine that I need to keep handy, but don't want seen. When I kept my water bottle on the back of the table I felt like it invited others to set their things down on my table, and yuck - coffee, wine, what have you...this sort of made it feel less of an option for shoppers.
