When you sell an item, it is moved out of the active items in your shop and into your sold items. People can still click on your sold items and see the listing if they want.
Kristin is right assuming you have set the quantity to 1. If it's more than that, the item should auto-renew itself (meaning it will have the same number of views, favorites, etc).
