To get to your feedback, if you loiter your cursor over "your account" in the top right corner, it will show an option for feedback. It'll automatically take you to feedback you need to leave first.
When I receive an order I always send that person a message as soon as I can. If that person is new to Etsy, I always add a polite little reminder at the bottom of the message to say that feedback is important for expanding small shops and if they are pleased with their item that they please some.
As far as defining your market goes, consider advertising on blogs/websites with a similar style etc.
