yes. there's a huge difference between really good bacon and the stuff at the grocery store. i like thick cut apple smoked from zingermans- all organic, smoked in house, little fat. to die for. put it in anything and see what a differnece it makes. oh, and i have no doubt you're low maintenance- that's a good thing. am i high maintenance? i don't think i am but others may have a different opinion :)

I'm sure apple smoked thick cut organic bacon from Zingerman's is very good bacon.

Whether or not it makes a material difference to pea soup compared to average bacon, I'd be willing to debate. Especially if the provenance and cost were unknown.

Anyway, my preference is pea soup made with ham and bone. Long simmering. But it seems hard to find hams that aren;t overly salty now.

haha. i think whenever you use the best ingredients possible, the soup is always better. i'm not the type to use "past the due date" veggies etc for soup etc. i'm fussy that way. oh well, my soups are darn good (if i say so myself). i always use excellent cuts of meats, good veggies, homemade stock, and fresh herbs. i'll make do with less in a pinch, but generally not.
now i'm so flipping hungry i have no option but to go to sleep to combat the hunger. chat ya in the AM.

oh well, susan, i guess i won't be converting you.
cg- i make mine with ham bones too- i always take the xmas ham bone home after the meal. the day after xmas is always ham and pea soup. also an excellent variation although i'm partial to the bacon one.

You're absolutely right of course about great ingredients.

But those aren't always available to most people, and good cooking is still good cooking. I've been around long enough to witness people fawning over so-so restaurant food just because they're paying a lot of money for it.

i think it may be true but i'm not totally sure. we have a company called honey baked hams that we buy our hams from that have a crusty brown sugar coating. they are so good and not terribly salty. i haven't had anyone else's hams in so long i'm not sure.

Good Morning ! I'll have to go check out this enamel artist, it seems he has some here close by where I used to have my jewelry shop. Its very pretty ! Its been soo cold here, i considered making soup for dinner tonight. Were back to wearing pants. At least it's not raining this morning ! Peg, we had storms like that here Thursday. My son sitting in the dentist chair while the dentist - who was obviously afraid of the storm- was telling my son what it looks like through the 10 foot window were all infront of while he has a drill in his mouth. We lost power for 5 hours that night and trees were down all over here. Kit, so happy for your M.

Love soup, but don't care for pea soup. In fact, don't care for peas, period. They made me eat them in nursery school and still haven't gotten over it. Same thing with bread pudding. Can't stand even really good bread pudding.

CG, I wish they'd eat what I want them too but they're picky!

Kit, a string trimmer is a weed whacker (in case that's what you call it down there) A machine that uses extra thick nylon string to cut weeds, like under fence lines, etc. We have a heavy duty one that uses a metal blade but it's too heavy for me and our other lighter one died.

Morning! Just popping in. Kids start a week long camp this morning and I'm late with my RAW ring so it's great timing. 3 hours of daytime studio bliss for 5 days. I probably should have volunteered to help at the camp but, hey, I'm selfish.
