We became interested in the star rating system a few months ago. Our current star rating grade is 100% message response time, 4.9 average rating, but only 61% on time shipping. The 61% rating should be 100% due to not being able to understand how to change the "ship by" date when order is received. This is important to us because we sell food items mainly baked goods, cakes, madeleines, etc. Many of our orders request a later shipping dates for birthdays, holidays, etc. The good news is that we finally solved problem via Etsy document "How to set processing times and ship by dates". If others are having this problem: Go to Shop Manager then Orders and Shipping. If you have Etsy transaction which includes a buyers note asking for later shipment, choose the ... three dot (ellipsis) icon and you can select and change the requested ship by date.
Our problem: To the best of our knowledge we have always shipped on the date buyer requested even though the ship by date generated by Etsy on the transaction was based on our processing time. We can document every transaction which include buyers requested ship by dates.
Question: How to we convince the right people with Etsy to review our problem and to correct our star seller rating "on time shipping" Our "on time shipping" should be close to 100% rather than 61%.

Going forward you now know how to change the ship date so you'll be back on track for star seller in the future. Etsy has said they will not manually review star seller stats. You learned your lesson, so aim to get the badge in the future.

You set the processing time so that ship by date is generated by Etsy based on your data. You're in control of it, not Etsy.

Sorry, but no one from Etsy is going to review your messages and see that your were shipping as per your customers time preferences. This was not a technical issue, but an oversight on your end. Now that you know the correct process you can start making the correct adjustments going forward.
There is no technical issue, you were shipping late, according to your processing times - it is all correct,
The error, was not adjusting your shipping times, that was your error, which you have now fixed, so things will gradually flow through to future calculations.
