Are they buying from an existing order or are you setting up a custom order? I have different processing times on items that I have to make after the customer orders. On items that can be shipped right away I have 1-2 days which is what I enter when publishing the listing.
Maybe those that have shipping profiles do it differently. I don't use shipping profiles or calculated shipping so maybe it's different if you use those.
