I’m a new seller and have been unable to figure out how to enter different quantities in one listing, e.g., 3 boxes for $15.00, 5 boxes for $22.00, etc. I’ve seen such listings by other sellers. Any help is appreciated.
Sounds like you need to create a custom variation.

in the listing form it's called Add Variations. It's under the Price. I think.

But be aware you can only charge one postage rate, so if larger packages will require more postage, you will need to build part of the postage into the price, which may then make it look like the customer isn't saving anything by buying more. But if you charge the postage you need for the heaviest package, it will look like too much for single orders.

Just put the amount without the dollar sign.
As @PetandWildlifeGifts a mentioned, don’t include the $ sign.
To clarify:
Create a variation called “Quantity”, with options “3 boxes”, “5 boxes” etc. Make sure to check the box that says “Prices vary by Quantity”, and then enter the price for each option. Etsy will automatically append those prices to the relevant option, so in the drop-down menu it will end up showing as “5 boxes ($22)”
