I had one 2 star review last year in July 2023. All of our reviews have been 5.0 since then. Even if you go past the three months, we would still average over 4.95 which would be 5 stars. Am I missing something?

You have 16 5-star reviews and one 2-star review over the past year. That averages to 4.82
If you're talking about your shop's overall score (not star seller,) the last 365 days of reviews are averaged.
What am I missing? I see 5 stars everywhere I look and you have a star seller badge. None of the individual listings I looked at showed less than 5 star reviews. I do see a two star on page 2. Basically, as you make more sales, it will continue to move further back. Overall though, everything looks ok. There are no comments on that review, so I doubt it's going to mean much to anyone.
Star Seller is 3 months so is 5 stars. Shop reviews are a rolling 12 months, so you will be at 5 stars when the 2 star drops off on July 5th. By the way, Etsy never learned to round up.
