I had set up "Automatically send offers to interested shoppers" with a Thank you coupon to customers that have purchased from my shop. Unfortunately, it appears that according to Etsy's info, none of them have ever been sent out. I'd appreciate some input about this. Thanks!
I think I've had 10 or so redeemed this month. Also, Etsy has millions of sellers. If even 10% have signed up for those coupons, they couldn't possibly send your coupon out in every email they send. I don't subscribe to them, but I would guess they only include a few in each email they send out for that.
Internet statistics say 10% isn't really enough to get most shopper's attention. 15% is usually the lowest level where it will influence buyers to hurry to make a purchase, especially on low cost items.
If you already have a sale going on, they can't use the coupon, too. Etsy will take whichever sale gives the customer the bigger discount.
Do not expect coupons to be an instant boost to your business. Across retail, both brick and mortar and online, less than 1% of coupon codes are ever redeemed. While coupons can increase sales, you need to keep your expectations in check.

@JJewellerySuppliesUK Think about all the coupon codes we all receive weekly, either in the mail or online. Almost every place I shop sends me at least a couple a year, and some businesses more often than that. Most of the time we just ignore them.
I’m not sure if this is relevant, but I see you have a sale going on in your shop. I noticed that when I have a sale going on, it trumps any other coupons, automatically.
You have had 25 sales so far. How many of them have been since you set up the coupon? They don't go to past customers, only those who opted to receive them since you set it up.
Etsy sends so many promotional emails out, I doubt many people sign up to receive them.
If they are someone who buys a lot on Etsy, they will not all receive your coupons since Etsy only sends them about once a week and only a limited number to any one person.
The odds of anyone receiving a coupon are very low and the odds of anyone using a coupon they receive are very, very low as only a small percentage of coupons get redeemed.
I actually set it up so the code goes onto the paper receipt under " note from the shop"
