how do we make a custom order when they don't request it

I have a repeat order but they want a custom item slightly different. How do I make a custom order for someone when they do not request it by custom order and just send you a message. So hard to figure out.

Hello Jane. I have done this before by just creating a new order and titling it "Custom order for....." (fill in the blank with the customer's name). Then, once I've listed it, I just send the buyer a link to the listing so they can make their purchase.
