i know i know, you guys have been patiently awaiting another post from me...
happy to oblige.
best ever shortbread cookies:
2 sticks butter
1/2 cup sugar
2 1/2 cups flour
1 tbsp rendered chicken fat (optional, but you would be surprised)
grated orange or lemon peel, from one orange or one lemon
heat oven to 300. whip sugar and room temp butter and chicken fat. add flour. mix with your hands to form a dough. roll out to 1/2 inch and cut into desired shapes. bake for 25 minutes.
I know this sounds weird but this is how they used to be done. i got it from a book called "old fashioned baking" to render the fat, take the fat deposits from a chicken you are about to make for dinner, slowly melt them in a small pan, on medium. remove any solids.
flavor variations:
mix in chopped almonds
add dried herbs and reduce sugar to half, for a savory option.
add cocoa powder or chocolate chips
sprinkle with cane sugar
add pepper
add cardamom
top with melted caramel
