I haven't seen the Empty Bottle one! But I prefer all online. I'd like to attach a few images of my products, a few links to my shops and social media, and provide a synopsis of my shop. Perhaps a dollar range of price tags included in the shop...
It's also helpful knowing more about the fair upfront, so I can tailor my presentation to the correct audience. Ex) When I know I'm going to be at a brewery I am sure to send over all my beer garden artwork, and already in my head note to set the display up to highlight those items
