What to do when people don't read shipping times

I have posted at the top of all of my listings "Please see my shop announcement for current production time". I have seen lots of shops do this so they don't have to change the shipping time for every listing when they get really busy or a little slower.
But I get people emailing me a few days after purchase asking me when there item is going to ship. My current production time is 1-2 weeks.
Is there anything I could do to help people see my shipping times better (except changing every listing, every time my production time changes!)

As soon as someone places an order on a product with a long production time, send them a convo (or maybe an email if they're new to Etsy) thanking them and reminding them of the wait.

If you get a lot of orders, this may take a bit of time but at least the customer won't be able to say they didn't know how long it would take.

You could put it in the message to buyers so it shows up on the checkout page.
You get there by hovering over your shop name at the top right
Go to Info and Appearance
Put the info in the second box from the bottom (the one called Message to Buyers)
This message appears on receipt pages and in the email buyers receive when they purchase from your shop.

I always have a note at the bottom of my listings telling buyers to check policies. I'm sure the info on your item in the shipping section is supposed to give them an estimated date of when their order will be ready to ship
