Does anyone know how to edit "Note from Shop" when someone makes a purchase?

I believe you're talking about the 'Message to Buyer'?

Go to 'Your Shop' at the top of your page and go to 'Shop Settings' and 'Info & Appearance'. Then you'll go to the bottom of the page to edit the Message to Buyers.
