Do you have items that are Made to Order? Or One Of A Kind, once it's sold, it's gone?
If they're Made to Order using a real person is often more helpful and the people buying will know that what they are ordering was not in someone else's hair (a MAJOR turn off for quite a few buyers).
If it's OOAK it's a toss up. It's probably better to use a mannequin so you don't turn off customers who like things to be unworn, but sometimes it's really nice to see something on a real person.
I'd go for the real life model. To me it's worth the risk.
