Re: Favorite Foods and Recipes

So, since I began working for a 90-something southern woman I have made both black eyed peas and now collards.

Re: Favorite Foods and Recipes

I'm making lemon white chocolate chip cookies tonight. I figure they will either be amazing or a disappointment.

Re: Favorite Foods and Recipes

Very good. I used the basic cookie recipe off the back of the bag of white chocolate chips only I add the zest of one large lemon, the juice of that lemon (about 4 tablespoons), a cup of chopped toasted almonds, and only used about 1 1/2 cups of the white chocolate chips instead of using the whole bag. I'm thinking this would work with dark chocolate chips and orange instead of lemon.

CREAM CHEESE PIE
My favorite pie , If I make this my mom and I will have it at night with milk and the next morning with coffee until we have to fight over the last piece LOL

1 cup white sugar
1 tsp lemon extract
1 teaspoon vanilla extract

Topping
1 cup sour cream 2 tablespoons white sugar
1/4 teaspoon vanilla extract 1 (9 inch) prepared graham cracker crust

Directions

Combine cream cheese, eggs, 1 cup sugar, and 1 teaspoon vanilla and 1 teaspoon lemon in the bowl of an electric mixer. Mix on low speed until smooth. Pour filling into graham cracker crust.

Dee, that sounds like a quick version of a cheesecake. I'm thinking fresh berries on the top would be really yummy.

Re: Favorite Foods and Recipes

It is like cheese cake but it is creamier, and sometimes we put a can of cherries on top.

Crazy!!!! <<Smooches!>> Collards and black eyed peas are YUMMY...as long as you add bacon grease. :)

Joanna, those sound great...Love the idea of dark chocolate chips and orange zest and juice.

Dee, I gained 5 pounds just reading the recipe...Sounds luscious!

Re: Favorite Foods and Recipes

Jumping in to say hi. I found MUTTON at the local store. I use to order it a local restaurant and then use the bones for jewelry. They stopped serving that dish.
I was so delighted to find it at the meat counter.
I cooked it up with a half a can of enchilada sauce and some mole sauce.
It was soooo tasty. The meat is flavorful. Kind of gamey and the sauce had this wonderful umami flavor.
I have to go back for more.
Plus Ozzie gets a bit of the meat before its sauced up.

Re: Favorite Foods and Recipes

Mutton is just an older lamb, right? I never had it growing up, but, learned to like it after I got married. My MIL taught me how to cook leg of lamb...loved it! Too pricey now. :(

Re: Favorite Foods and Recipes

We ate venison when we were kids and got us use to a gamey taste. This mutton didnt come out as good as my last batch. I went healthy and cut off a lot of fat.
Then I pulled out the meat and poured the sauce into a container forgetting that it had bleach in it and I hadnt washed it.
So that went into the trash along with the fatty bits.
I am so not into cooking these days.

Re: Favorite Foods and Recipes

She must be, Crazy! Fat is essential! Speaking of which, I bought some uncured bacon...fried up about half of it over the weekend. Bacon and eggs, bacon in a salad and a peanut butter and bacon sandwich. Saved the bacon fat for sauteing some baby spinach. :)
