If you have the option, buy adjustable height tables and set them at their max height, which is usually counter height. Many people will tell you that you need height in your displays. I say its a mixed bag. When you watch people walk through a craft show their eyes are set at table top height, no higher. I've tested this as well. I have a sign with prices for my personalized name jewelry that I have set upright and flat. I've switched it mid show as well. Being up right, no one ever saw it until I pointed it out to them (even though it was right next to my easel necklace display, with names hanging about three inches off the table and higher). When it was flat, everyone saw it. My only exception to this what at my last show when I finally had enough pendants to fill my homemade display (its about 20" tall and 30" wide). People noticed it and looked. But they didn't see any higher than where the pendants hung at as I had jewelry on top of this display as well (which was generally at eye level). I also had adjustable tables at this show, which I feel made a huge difference. But in the end, people were still only looking about 10-12" above the table top.
