We made the Cheeks FB business page from our personal pages and now we're having problems posting on other peoples walls as Cheeks Celebrations not ourselves... anyone else having this problem?

I have this problem all the time. I still have not figured it out.

You can't. You will always be you (the person) on other walls. You will only be your fan page entity on you fan page.

It is now possible.
You can change your user setting on your business page. It's a little difficult to navigate to the page you were intentionally wanting to post on, because FB history doesn't remember your business ever having any contact with that page.
With time it should get easier.

Ya it's fixed now. Finally! Under the Account tab on upper left is a Use Facebook as a Page thingy. That will allow you to select your page.

Will everyone post their pages so we can find each other? Or is their already a list somewhere?

Not sure if you are aware, but when you "like" something through your fan page, it doesn't actually count as a "like." It's pretty disappointing! Still, looks like you're getting going pretty well. I believe you can change your fb URL when you surpass 25 likes!
